Hot Dog Carts - Standards
A vehicle from which only cold beverages and pre-cooked meat products (wieners or similar sausage products) are prepared and offered for sale to the public.
The requirements are:
1. All food products shall be served in single service containers.
2. All hazardous foods (meats) are to be kept at an internal temperature lower than 4 degrees C (40 degrees F) or higher than 60 degrees C (140 degrees F).
3. Cold holding storage units must be provided.
4. Provide an accurate indicating thermometer in the cold storage unit.
5. All prepackaged hazardous foods shall have a permanent code marking of the manufacturer or processor, designating the plant or commissary where the food was manufactured or processed and the date on which the food was manufactured or an expiry date.
6. All condiments must be kept in a container that prevents the entrance of contamination.
7. The vehicle shall be equipped with potable hot and cold running water under pressure.
8. The vehicle shall be equipped with a hand sink.
9. Waste holding tank and potable water tank must be equipped with easily readable gauges.
10. All wastewater shall be disposed of in an approved sanitary manner.
11. Adequate garbage containers shall be provided. Garbage must be disposed of in a sanitary manner.
12. An extra set of clean utensils (tongs) is to be stored in a clean plastic bag ready for use.
13. Two clean pans are to be provided for utensil washing. Utensils are to be washed in the first pan, rinsed under water and then immersed in a chlorine solution at a minimum strength of 100 ppm chlorine OR washed, rinsed and sanitized at an approved location.
14. The interior surfaces of the vehicle shall be of a smooth, tight and washable material and maintained in good repair.
